Everything influences it: the flowers bees forage from, the shifting weather, the unique geography of the land and the chemical input from farmers and gardeners.

Just like wine, honey comes in a spectrum of styles. You might love the delicate, floral sweetness of Hungarian Acacia honey, while someone else craves the deep, rich caramel notes of rare Spanish Oak honey. Some varieties are so unique, harvested only in remote mountainous regions or in tiny quantities, that they command luxury prices on the world market. Honey isn’t just a sweetener - it’s a story of nature, a time and a place in every jar.

My Top Ten Honey from around the globe include only remote region honey, away from crop spraying and pesticide, raw, unpasteurised, gravity filtered. Harvested in a time honoured, traditional fashion, taking care to preserve every drop and and retain the working enzymes. Enjoy:

  1. Taif Rose Honey - harvested in the mountains of Al-Shifa and Al-Hada, Saudi Arabia. Before the roses are picked, the bees travel from flower to flower, collecting the rare and precious nectar of these roses, for our unique and precious Taifi rose, Honey.
