Wild Thistles are very common plants in Sardinia. The honey has a medium intensity aroma which begins with a fruit, floral scent that becomes intense recalling the Mediterranean scents. The taste is medium sweet and slightly sour and bitter. It has an average persistence in the mouth. It crystallises spontaneously several months after harvest.
Raw Honey should not be fed to infants under 12 months of age.

Are your products Vegan?
No.
Some see selling honey as exploitation - We see it as a partnership.
We practice ethical beekeeping which supports wild pollinators, strengthens local ecosystems, and helps protect bee populations under threat from habitat loss, pesticides, and climate change. In our practice, the bees always come first: queens’ wings are never clipped, swarming is allowed, the bees keep the vast majority of their honey. The small surplus we harvest funds their care and conservation, ensuring more healthy, thriving colonies to pollinate the plants we all rely on.
Our Apiaries are limited to a maximum of four colonies to any one well stocked acre. This means more work and expense for us but helps mitigate pressure for resources on wild pollinators. Our Apiary in Steart is now limited to two colonies due to the pressure on pollinators.
We work hard to raise awareness of the plight of wild pollinators, suffering from lack of habitat, loss of wildflower meadows, lack of safe chemical-free food. We plant for all pollinators and leave areas of garden to go wild and encourage you to do the same.
